Dinner | Marinated Steak with Greek Salad and Lentils
I will admit, this post is a rather boring one about a standard week night dinner. However, when it comes to cooking mid-week, all my ideas fly out the window and I am often stuck between a rock and a hard place, or should I say a Bolognese and a Stir-Fry. I have my ‘fall back’ recipes that are so boring to me, and are often not very healthy, but more so comfort food. So, in an effort to help me, and you dear reader, have a collection of ‘go-to’ recipes that are nutritious and tasty, i’ve decided to post a few week-night dinner recipes. These are nothing flashy and certainly are not ‘Instagram’ worthy, but they are simple, easy, healthy mid-week meals.
In my mind, the perfect healthy meal must consist of a protein, some salad and some sort of filler (preferably something full of fibre like lentils, chickpeas, quinoa etc.) I try and steer away from foods with next to no nutrient value like rice, potatoes, bread, pasta. So for dinner tonight, with my three principles in mind, I rustled up some marinated steak with greek salad and lentils.
So here’s what’s in it:
4 portions of beef rib eye
4 Tbsp Extra Virgin Olive oil
2 Tbsp mixed Italian herbs
salt and pepper
2 cups brown lentils
3 garlic clove
3 cups water
The zest of one lemon
5 tomatoes
Fetta cheese
1 cucumber
1 red onion
Kalamata Olives
Marinate the beef in olive oil, salt, pepper and mixed italian herbs and refrigerate for 1 hour. Then, cook the beef in a hot pan, or a barbecue. For the lentils, add them to a pan with water, salt and garlic cloves and bring to a boil. Once it has reached a boil, turn down to low and let the lentils slowly simmer until the water is absorbed and the lentils are soft. When soft, add the zest of a whole lemon and some extra virgin olive oil. For the salad, dice all of the ingredients up and dress with some olive oil and lemon juice. Serve.
